Tofu PieIngredients:

  • 1 – 9″ ready made graham cracker pie crust
  • 1 – 3oz package strawberry Jello (may use any flavor of Jello)
  • 1 c. boiling water
  • 1 – 2 Tbsp lemon juice
  • ½ tsp lemon extract
  • 1 – 12oz box Mori-nu silken tofu (soft)
  • ½ – 8oz container non dairy whipped topping

Directions:

  • Mix together Jello, boiling water, lemon juice, and lemon extract. Refrigerate until slightly firm.
  • Drain tofu, then blend with whipped topping in electric mixer. Mix in Jello mixture.
  • Pour into crust then refrigerate. When firm, garnish with any type of fruit.
