Butter Mochi

Ingredients:

  • 1-16oz box mochiko rice flour
  • 2 c. sugar
  • 3 tsp baking powder
  • 4 eggs (beaten)
  • 1 block butter (melted)
  • 1-13.5oz can coconut milk
  • 2½ c. milk
  • 2 tsp vanilla extract

Directions:

  • Preheat oven to 350˚ F. Grease a 9×13 inch pan.
  • Mix the ingredients in the order given in a large bowl. Pour into a prepared pan and bake for 1 hour.
  • When done, allow mochi to cool completely. Cut into desired amount of pieces with a plastic knife.
