- 1 – 9″ ready made graham cracker pie crust
- 1 – 3oz package strawberry Jello (may use any flavor of Jello)
- 1 c. boiling water
- 1 – 2 Tbsp lemon juice
- ½ tsp lemon extract
- 1 – 12oz box Mori-nu silken tofu (soft)
- ½ – 8oz container non dairy whipped topping
- Mix together Jello, boiling water, lemon juice, and lemon extract. Refrigerate until slightly firm.
- Drain tofu, then blend with whipped topping in electric mixer. Mix in Jello mixture.
- Pour into crust then refrigerate. When firm, garnish with any type of fruit.
